So,

The melting snow is really deep on our parking lot, creating 6-8 snow potholes. They are every where, and the van rocks pretty good. My question is; is it best to hold that steering wheel tight and try to control her, or let the wheel have some freedom to go where it wants?

It would be my opinion that the stearing wheel was put there for a reason, and should be held on to. If the wheel is jerking that much when you hit a pot hole might I suggest slowing down a bit. You can't stear your rig if you're not holding the wheel.

OOPS, I meant to put 6-8 inch potholes, and we do go slow. Ok, so be more firm on the wheel.

Just keep your thumbs and fingers out of the middle of the steering wheel so, in the event the steering wheel spins and breaks your grip, you won't twist and break bones - usual practice for off-roading. If you let go, it would be very difficult to regain control once that steering wheel starts to spin... IF you even have time to regain control. Bad things happen fast.
