Tasty if done properly, like very lean beef. Tough and inedibly gamey if not done properly. They are such ugly beasts that you're doing them a favour by eating them.

We had a cat who was crazy about moose meat. He would grab pieces off the dinner table, then run behind the stove to eat them. For some reason he growled at moose meat. Grrr...grrr...crunch...crunch...

I think this would be an appropriate term to describe the buyer: one goes to a Delicorium to view the selection, seeing a veritable smorgasbhorde from which to choose.
